When I went to change the settings of the menu bar clock, they had vanished. Finding them revealed significant changes coming in macOS 11.

Simple: when running on older macOS, remove some items from the app menu. The solution is also straightforward, just very hard to locate.
Adding sub-commands to write the contents of textboxes to the pasteboard: a simple task, but so easy to get hopelessly lost in it.
